Macaroons- Yummy- Yummy!



Do you like Macaroons? They are so delicious if you happen to like coconut... they are soft and chewy and toasty on the outside..... like a light brown color. One of my favorite cookies. Well, my latest little folksie is just that-- a macaroon-- i think my felting is getting smaller and smaller... she ended up being 1 1/2 inches, she is in anime style and is a cute little cookie! Hope you like her!

Recipe for Macaroons: You will need the following: 2 egg whites, 1/4 cup granulated sugar, 1 teaspoon grated lime peel, 1/4 teaspoon ground nutmeg, 1/4 teaspoon almond extract (optional), 1 bag (7 ozs) sweetened flaked coconut ( about 2 2/3 cups), 1/3 cup whole blanched almonds, 3 squares ( 3 ozs) white chocolate, melted.. ooh yeah, and 2 tablespoons confectioner's sugar.

Making the Macaroons: Preheat your oven to 325 degrees F. Line a baking sheet with parchment paper. In a large bowl, combine egg whites, sugar, lime peel, and nutmeg; add almond extract, if desired. Using a fork, lightly beat mixture until sugar is dissolved, about 1 minute. Stir in coconut until it is completely coated with the egg mixture.

Drop dough by level tablespoons onto the prepared baking sheet. Bake cookies on the middle rack until golden, about 25 minutes. Cool slightly; peel cookies from parchment paper and transfer to a wire rack.

Spread almonds in a single layer in a baking pan. Toast nuts in the warmed oven, shaking the pan occasionally, until they are light brown and fragrant, 10-15 minutes.

Let nuts cool completely. Using a food processor or chopper, process until finely chopped about 10 seconds.

In the top of a double boiler set over simmering water, melt white chocolate. Transfer the melted chocolate into a small bowl. Place chopped nuts in another small bowl. Dip the top of each cookie into the white chocolate , then in nuts. Return cookies to the parchment paper.

Let cookies stand until chocolate is set, about 15 minutes. Serve or store in a tightly sealed container. Enjoy! Felted Hugs, Folksie girl
